This is another favorite in our house. The best part is...it's SUPER easy!! I LOVE good food and I love pretty food, but the problem is, when you are a mom with young kids that want to be out playing in the afternoons, or have baseball or dance practices, it's hard to get something fancy on the table every night. So, my philosophy with food is this...if you can't make it look good and taste good in under an hour (preferably a half hour) don't bother!!! :) Now, this isn't always the truth. If I'm having a party or if we're celebrating a holiday or something I totally don;t mind making a meal that takes longer...it's just the everyday that should be easy and stress free.
With every recipe I approach it with the attitude of "how can I make this easier and still taste good???" So, I'll post the original recipe and then my shortcuts that I like. :) Sound good??
SO...back to the soup. You can have this ready in a half hour no problem. The kids love it because it involves chips and cheese...I love it because it is a little more sophisticated and pretty. :)
Ingredients:
2 skinless, boneless chicken breasts ( I use a rotissere chicken from costco $5 for 3 lbs!!)
1/2 tsp. olive oil
1/2 tsp minced garlic (i used crushed garlic from a jar in my fridge)
1/4 tsp ground cumin
1 32oz carton chicken stock (I double this and add some chicken boullion cubes and water to make more broth)
1 bag of frozen corn
1 chopped onion
1/2 tsp chili powder
1/2 of a fresh lemon
1 cup chunky salsa ( I use pace medium picante sauce)
shredded cheese
tortilla chips
I also like to garnish with cilantro, avocado, tomatoes, and sour cream.
In a large pot over medium heat, saute the chicken in the oil (or tear up your rotissere chicken and add it to the pot) Add the garlic and cumin and mix well. Then add the broth, corn, onion, chili powder, salsa, and lemon juice. Reduce the heat to low and simer for 20 minutes.
To serve break up some tortilla chips into each bowl. Top with soup, sour cream, cheese and any other toppings you would like. I make quesadillas to go with it and the kids LOVE it.
